Beijing’s Forbidden City was built to satisfy royal appetites for extravagance. Marathon banquets were held within, the soup served at one such affair prompting a Ming Dynasty poet to write that it “brought smiles to imperial faces.” Ours could do just that, pleasantly hot and sour, loaded with wheat noodles.
