Vegetarian Chili Stuffed Potatoes
1. Wash 3-4 medium size russet potatoes and pierce with a fork. Rub potatoes lightly with olive oil and sprinkle with sea salt or kosher salt.
2. Bake at 350°F until tender, about 30-40 minutes (test with a fork; the potato should pierce easily).
3. Prepare Fantastic World Foods Chili following package instructions. Keep covered and warm.
4. When the potatoes are done, cut an opening in the top and fluff the potato with a fork. Top with the vegetarian chili, shredded cheddar cheese, and chopped green scallions or chopped chives.
