Tabouli Salad in Phyllo Cups

1 teaspoon - olive oil
1 tablespoon - shallots
1⁄2 cup - red peppers (diced)
1⁄2 cup - yellow peppers (diced)
1 cup - fresh mango (diced)

1. Prepare Fantastic World Foods Tabouli following package directions. Set aside.

2. On medium high heat, add 1 teaspoon of olive oil. Add shallots and peppers and sauté just to soften. Fold pepper mixture into tabouli, add mango, and fold together. Fill phyllo cups with tabouli salad.


To make phyllo cups:

Using five sheets of phyllo, brush each layer with melted butter, and layer each sheet on top of the other as you go. Cut sheets into 4-inch squares and tuck each layered square into a cupcake tin. Make sure corners of each phyllo square lay over sides of each cup. Bake at 350°F for 8-10 minutes or until golden brown.
